For the smoked salt the sea salt is smoked gently with beech and heather from Laesoe and then poured into a practical tub with a close lid for preserving the delicate smoke flavor of the salt.
Suitalble for al dishes, where the piquant taste of smoke is disirable.
Laesoe Sea Salt is made by boiling and seething the saline ground water in open iron pans heated by locally grown and logged firewood. Laesoe Saltworks only manufactures unrefined sea salt like in the old days. The salt is dried at first by the iron pans in wicker baskets and then in the attic above the salt shop.
